JAMONESGOURMET ensures that all pieces come from Iberian pigs fattened on acorns, herbs, tubers, roots and all the richness of the wooded pasturelands; this allows us to appreciate, even from their appearance, their unique characteristics in comparison with other hams*.
Iberian ham has its own stylised, elongated shape, with its characteristic thin “caña”, the part nearest the hoof, which is generally black. One side is leathery with a V-shaped cut, while the other has a fatty layer covered with mould. The fat can easily be recognised, because it melts at the lightest touch.
Furthermore, each piece has an identification band and another unbreakable seal showing the year of production and the number of the ham, which allows us to appreciate the exceptional curing time of each ham.
